Tasting Notes and How to Use
Aroma: Tart cranberry with soft orchard apple.
Concentration Behavior: 2 drops per 100 ml: a light cranberry apple accent. 4-5 drops: full cranberry apple character. Above 6 drops: can turn harsh and overpowering. In kombucha, iced tea, or a juice mocktail the base carries part of the flavor: 3-5 drops, no more than 5.
Best Pairings: Warm spices: cinnamon, clove, allspice, cardamom. Spirits: bourbon, brandy, vodka, spiced rum, prosecco. Herbs: rosemary, mint, thyme. Bases: sparkling water, apple cider, ginger beer. Homebrew: hard cider, amber ale.
Layering Partners: Use at 3:1 with Cranberry Apple dominant. + Lemonade (about 2 drops per serving): lifts the berry-orchard profile in seltzer. A cinnamon or clove accent from the spice rack pushes it toward holiday punch.
Substitutes For: Cranberry-apple juice flavor in sparkling drinks and punches (2-6 drops per serving plus water for volume); cranberry or apple syrup in cocktails (with a sweetener).
Does Not Replace: Juice volume, body, or red color. Real tartness -- the trace malic and citric acid in the base is not enough to balance a sour; add 0.5-0.75 oz fresh lemon juice per serving.
When To Add: Add in the glass or at the end of the build. For batch punch, add to the pitcher or bowl just before serving. For hard cider and amber ale, add after fermentation.
Use With Caution: Highly potent: stay at or below 6 drops per 100 ml in any drink; past that it can turn harsh and overpowering.
Perfect for: thanksgiving, harvest table, or cider press -- and anything that calls for tastes like the holidays at my parents' house or a fall punch for a family gathering.
